Cheesy Queso Chicken Rice
  1. Heat olive oil in a large skillet over medium heat. Add onion and cook for 3–4 minutes until softened.

  2. Stir in uncooked rice, taco seasoning, Rotel, and chicken broth. Bring to a simmer.

  3. Cover, reduce heat to low, and cook for 18–20 minutes, stirring occasionally, until rice is tender and liquid is absorbed.

  4. Stir in shredded chicken and queso cheese dip until creamy and well combined.

  5. Sprinkle shredded cheese over the top, cover for 2–3 minutes until melted.

  6. Let rest a few minutes before serving. Add your favorite toppings and enjoy!
