Black Tahini Brown Butter Chocolate Chunk Cookies (gluten-free!)
  1. Add browned butter, miso and sugar to a medium large bowl and whisk vigorously to combine.

  2. Add vanilla, egg and egg yolk and whisk again until light and fluffy.

  3. Add flours, baking soda and salt and mix until flour is almost completely combined.

  4. Add chocolate chunks and mix well to incorporate.

  5. Finally, pour in black tahini. Fold it in until just been incorporated. Do not over mix!

  6. Place bowl in the fridge for a minimum of 30 minutes.

  7. Preheat oven to 350 degrees. Place parchment onto 1-2 cookie sheets.

  8. Measure out cookie dough using an ice-cream scoop. I baked 5 cookies at a time. Bake for 12-15 minutes.

  9. Once cookies are done, bang the pan on the stove top to help them fall.

  10. Sprinkle with flaky salt and transfer to a wire rack to cool.
