Lay out your Lavash bread.
Add finely chopped sun dried tomatoes + oil & softened cream cheese into a bowl and mix well. Spread all over lavash bread
In a saute pan, add olive oil spray on medium heat then add in your chopped spinach. cook for about 2 minutes then add salt + pepper followed by more chopped sun-dried tomatoes. Once done cooking set aside.
On low heat, Cook ½ cup egg whites in same pan, season with salt + pepper and add 1 tbsp feta cheese. Fold egg whites and turn off heat.
For assembly, add your spinach + sun-dried tomatoes on lavash followed by egg whites. Sprinkle with remaining feta and fold sides in then continue rolling like a burrito.
Cook with olive oil spray on medium heat on both sides of the wrap. Cut and enjoy!
