Divide into 4 patties (~130g ea), shape flat and wide.
Grill or roast at 550°F for 8–12 min to 145–150°F
Rest 5 min. Slice ¼”, then in half.
Serve on pita w/ tzatziki, tomato, pepperoncini, lettuce
