Miso Salmon

Ingredients

    Marinade

  1. Set oven to Broil on High or roast at 425 F (220 C).

  2. In a small saucepan, combine mirin and sake. Bring to a gentle simmer for 1-2min to cook off some alcohol.

  3. Add the sugar and stir/whisk until dissolved.

  4. Reduce heat to low and add miso paste. Stir/whisk until smooth.

  5. Remove from heat and stir in soy sauce and peanut oil (or sesame oil substitute)

  6. Let cool.

  7. Marinate

  8. Coat the salmon generously.

  9. refrigerate for: 6-12 hrs for lighter flavor, 24-48 hrs for a more intense flavor.

Cook

  1. Scrape off excess marinade while leaving a thin coating.

  2. Broil/roast the salmon for 8-12 min depending on thickness until it reaches your preferred doneness.

  3. Optional: finish under the broiler for 1-2 min.
