Cut the apple into small, bite-sized pieces. Add them to a pan, drizzle on the maple syrup, add cinnamon and let the apple sauté for around 5 minutes on medium-high heat. Stir frequently. Allow to cool.
In a jar, mix all the ingredients for the overnight oats. Top with the apple pieces. Cover and set in the fridge overnight or at least 1-2 hours.
Serve with a dollop of extra greek yoghurt, some pecans or a tablespoon of nut butter.
