Turn on oven to make it warm, turn off when it reaches ~80 - 90 f
In a glass, combine water, sugar, and yeast. Set aside.
In mixer, combine flour, spices, and salt.
Once water, sugar,yeast mix has started to foam, add it to the dry ingredients in the mixer bowl.
With a dough hook attached to mixer, mix dough for 5 minutes. Add small amounts of flour and water as necessary to get the dough so you can touch it without sticking to your fingers.
Transfer dough to the counter. Clean mixing bowl, then oil the mixing bowl. Add the dough back to the mixing bowl and cover with a tea towel.
Put covered mixing bowl in the warm (but not hot) oven to let the dough rise until double in size (1.5 hrs+).
Makes one thick crust XL pizza (16").
