Preheat your oven to 400 degrees.
Chop 2 lbs of yellow potatoes into 1 inch chunks.
Spread them onto a large sheet pan along with 8 oz of baby carrots.
Drizzle with olive oil and season with a garlic and herb blend.
Bake for 20 minutes.
While those are in the oven, pat dry 6 chicken thighs.
Drizzle with olive oil and season with your favorite chicken seasoning and some paprika.
In a bowl, drizzle some olive oil over 12 oz of fresh green beans and a chopped onion.
Season with your favorite vegetable seasoning.
Take the potatoes and carrots out of the oven.
Mix in the beans and onions.
Place the chicken on top, skin side up.
Bake for 45-50 minutes or until the chicken is cooked through and the veggies are tender.
For extra crispy skin, broil for the last 3-5 minutes.
