Cook the halved yellow potatoes on the Blackstone griddle with olive oil, paprika, garlic powder, and Cajun Country seasoning. Cover and steam until tender.
Season the chicken thighs with salt and pepper and cook on the griddle.
Add the diced onion, bell pepper, and zucchini to the griddle. Also add the sliced kielbasa sausage.
Toss the vegetables and sausage with the Italian seasoning.
