Karaage (japanese Fried Chicken)
  1. Marinate the chicken for 30 minutes or more with the garlic, ginger, sake, mirin, stock paste, salt, and pepper (optional).

  2. Heat oil to 335°F.

  3. Fry the chicken until light golden in color.

  4. Increase the heat to 350°F and double fry the chicken for approximately 10 seconds.

  5. Cook until the internal temperature of the chicken reaches at least 165°F.
