In a jug add 1 tablespoon fresh grated ginger and 1 small whole red chilli that has been pricked with a knife
Pour over 100ml boiling water and leave to steep for half an hour to let the ginger and chilli mingle and flavour the water
Add 2 tablespoons organic apple cider vinegar
Add 1 tablespoon honey
Add 1 tablespoon lemon juice
Top up with hot water to 500ml
Stir the whole lot together
Strain and pour into a bottle
Pop it in the fridge until chilled
Pour a measure of punch over ice and top up with sparkling mineral water or soda water to serve
