Ginger Spritz (haymaker's Punch)
  1. In a jug add 1 tablespoon fresh grated ginger and 1 small whole red chilli that has been pricked with a knife

  2. Pour over 100ml boiling water and leave to steep for half an hour to let the ginger and chilli mingle and flavour the water

  3. Add 2 tablespoons organic apple cider vinegar

  4. Add 1 tablespoon honey

  5. Add 1 tablespoon lemon juice

  6. Top up with hot water to 500ml

  7. Stir the whole lot together

  8. Strain and pour into a bottle

  9. Pop it in the fridge until chilled

  10. Pour a measure of punch over ice and top up with sparkling mineral water or soda water to serve
