Wash and pat dry 12 button mushrooms, making sure to remove any excess dirt, then cut off some of the stem from each mushroom, without removing the entire stem, add the mushrooms to a large bowl
Drizzle in 2 tbsp of extra virgin olive oil into the mushrooms, along with ½ tsp of sweet smoked paprika, ½ tsp of garlic powder, a generous pinch of sea salt and some freshly cracked black pepper, toss it all together until well combined
Add the seasoned mushrooms to a baking tray lined with foil paper, making sure all the mushrooms are bottom side up and the cap side down, add into a preheated oven, bake + broil option 250 C - 475 F
After 14-15 minutes remove the mushrooms from the oven and transfer to a dish, sprinkle each mushroom with a generous portion of freshly chopped chives, enjoy!
