Khyariyah ( خياريه )
  1. Start by slicing the zucchinis into small disks that are not too thin or too thick. Chop the onion, garlic and cilantro.

  2. Fry the zucchinis in a drizzle of olive oil till nicely browned, but don't overcook them as they will be cooked again.

  3. Remove the zucchinis from the pan, and fry the onions with the beef. Season with salt, pepper, cinnamon and cardamom powder. Once the beef is browned, as back in the zucchini.

  4. In a cold pot, add the yogurt along with the egg, salt and pepper. Turn the heat on high and start whisking. Do not stop whisking till the yogurt boils. If it splits by any chance, add a tablespoon of cornstarch then blend it with a hand blender. If it thickens too much add water till you reach the desired consistency.

  5. Pour the yogurt on the beef. Mix it and cook it on medium for a couple of minutes.

  6. Saute the garlic in olive oil. Once it starts to brown, add the cilantro. Pour on the stew and mix together.

  7. Serve it on a bed of rice and enjoy!
