Parmigiana
  1. Coat the sliced aubergine in flour

  2. Make a sweet, rich and reduced tomato sauce

  3. Layer the dish with tomato sauce, aubergine, mozzarella and Parmesan, repeating the layers

  4. Finish with plenty of Parmesan as the last layer

  5. Bake in the oven at 200°C for 25 mins until golden and bubbly
