Thinly slice your green onion into long super thin strips to create green onion curls
Chop your chicken into ½ inch small pieces
In a bowl, add your chopped chicken, salt, pepper, mirin, potato starch, and water and mix well to make your batter
In a small bowl, mix soy sauce, rice vinegar, sesame oil, minced garlic, and gochugaru to make your dipping sauce
On a pan on medium heat coated with spray oil, pour your batter and spread thin in a circle to make a pancake
Once the pancake turns golden brown and slightly crispy and starts sliding when you shake the pan, flip it and cook until golden brown again
Remove the pancake from the pan, top off with the green onion curls, and top it off or dip it in the sauce and enjoy
