Combine the eggs, milk, almond flour, vanilla, salt, lemon zest, honey/maple syrup, and 2 tbsp melted butter in a bowl or blend and mix.
Melt 1 tbsp butter in an oven-safe pan.
Add 1 cup of blueberries.
Pour the batter into the pan.
Bake at 450°F for 15-18 minutes.
Serve plain or with maple syrup. Can also add a little powdered sugar on top if serving as a dessert.
