Prepare the Taco Seasoned Ground Beef and Avocado Cilantro Sauce according to the Prep Guide.
Preheat the oven to 425F. Line a large sheet pan with parchment paper.
Wrap the stack of tortillas in a damp paper towel and place on a plate. Microwave to steam, about 30 seconds (option to warm on a skillet if preferred).
Evenly space the tortillas on the sheet pan then evenly divide the shredded cheese between the 12, sprinkling on only one side of the tortilla. Evenly divide the ground beef between the 12, placing it on top of the cheese, then fold each tortilla in half. If they are not staying closed, place a flat object on top for a few minutes to hold, like a plate or second sheet pan.
Bake for 12 to 15 minutes, flipping halfway through, until slightly golden and crisp on each side. Sprinkle with salt (if desired) when the tacos come out of the oven and squeeze the lime juice on top.
Serve with avocado cilantro sauce for dipping.
