Popovers
  1. Preheat oven to 450F (232C) with muffin tins inside.

  2. Mix all ingredients and let batter sit for 15 min at room temp.

  3. Slice butter for each cupcake tin and place in the hot pan to melt.

  4. Pour batter into each well quickly.

  5. Bake at 450F (232C) for 20 min, then reduce to 350F (177C) for 10-20 min.

  6. Cool in pan before removing to a wire rack.

  7. To reheat, preheat oven to 350F (177C), smear butter on top and bottom of popover, sprinkle with flakey sea salt, and bake for 7-10 min.
