Roast a butternut squash in the oven at 400°F for about an hour.
Once the butternut squash is roasted, you can blend it with 1 cup of Greek yogurt to create a creamy sauce.
Add ⅓ cup or more of grass-fed butter to the blended butternut squash mixture for a rich, creamy texture.
You can also optionally roast onions and garlic with the butternut squash and blend them in.
If the sauce is too thick, you can thin it out with some bone broth.
You can also add nutritional yeast for extra cheesiness.
Serve the butternut squash mac and "cheese" and enjoy!
