Irish Soda Bread
  1. Preheat oven to 425°F.

  2. Lightly grease a 9-inch cast iron skillet (or cake pan).

  3. In a large bowl, mix flour, cornmeal, salt, and baking soda.

  4. Stir in yogurt until a shaggy dough forms.

  5. Knead just until a ball forms—if dry bits remain, add a tablespoon of water.

  6. Flatten slightly and place in the pan.

  7. Cut a deep "X" into the top.

  8. Brush with egg wash and sprinkle with black pepper.

  9. Cover loosely with foil and bake for 30 minutes.

  10. Remove foil and bake another 10-12 minutes until golden brown.

  11. Cool for 20 minutes before slicing.
