Bacon Spinach Strata
  1. Grease a 13x9x2 inch baking pan and set aside.

  2. In a small frying pan, over medium heat, melt the butter.

  3. Stir in the shallots and garlic and saute, stirring frequently, until tender, about 3 minutes.

  4. In a large bowl, combine the bread, spinach, cheese, bacon and the sauteed shallots and garlic and toss until well blended.

  5. Spread evenly on the bottom of the prepared pan.

  6. In a large bowl, using a wire whisk, beat the eggs until foamy.

  7. Gradually whisk in the milk until well blended.

  8. Stir in the salt and pepper.

  9. Pour the custard evenly over the top of the bread mixture.

  10. Cover the pan with plastic wrap and refrigerate for at least 4 hours.

  11. Remove the pan from the refrigerator and let stand at room temperature for 30 minutes.

  12. Heat the oven to 350F.

  13. Bake the strata, uncovered, until the top is puffed and golden brown, 50 minutes.

  14. If the top starts to brown too quickly, cover loosely with foil.

  15. Remove the pan from the oven and place on a wire rack.

  16. Let cool for 5 minutes.

  17. Cut the strata into squares or spoon from the pan to serve home-style.
