Mix all dumpling filling ingredients in a large bowl.
Combine sauce ingredients until sugar dissolves; set aside.
Soak a rice paper sheet in warm water for 10-15 seconds; place on damp paper towels. Halve it, add a heaping tablespoon of filling, and fold into a triangle. Repeat for all sheets.
Heat 1 tbsp avocado oil in a nonstick skillet over medium heat. Cook dumplings in batches until golden brown and internal temperature reaches 165°F, about 4-6 minutes per side. Add oil as needed.
