Preheat to 190°C and line a 20×10cm loaf tin
Peel and slice the apples very thinly (3mm)
Whisk the flour, baking powder, cinnamon and salt
In a separate bowl, mix the melted butter, milk and vanilla
Beat the eggs and sugar for 90 seconds until pale
Add half the dry mix, then the butter–milk mixture, then the rest of the dry mix, mixing just until smooth
Fold in all the apple slices until everything is lightly coated
Layer the apples into the tin, pressing them down so they sit neatly, and pour over any remaining batter
Bake 70–75 minutes until golden and a skewer comes out clean
Cool in the tin for at least 1 hour before slicing so it sets properly
