Chop the potatoes, drizzle with oil and salt, and air fry at 180°C for 30 minutes until golden, crispy, and cooked through (or bake them if preferred).
In a bowl, mix together the chopped fresh coriander, minced garlic, chilli flakes (or fresh chilli), lemon juice, salt, and a drizzle of olive oil.
Add the cooked potatoes to the bowl and toss everything together.
Serve hot.
