Sift 3 cups of self-raising flour into a bowl.
Add 300ml of cream and 300ml of soda water, and mix gently with a knife to combine.
Turn the dough out onto a well-floured surface and shape it into a round.
Cut out scones using a cutter or glass, and place them close together on a baking tray.
Brush the tops of the scones with a little cream or milk.
Bake in a hot oven at 220°C/430°F for 15-20 minutes until golden brown and sounding hollow when tapped.
For blueberry and white chocolate scones, add 1.5 cups of frozen blueberries and 1 cup of white chocolate chips to the dough before shaping.
