The Chocolate Peppermint Cookie
  1. Mix cold butter and sugars till just combined and no large chunks are remaining

  2. Add egg yolks, egg, and vanilla

  3. In a separate bowl, combine dry ingredients (sift cocoa powder)

  4. Add dry ingredients to wet mixture, half at a time, being careful not to over-mix

  5. Add peppermint chips and semi-sweet chocolate chips

  6. Shape dough into 4 oz towers

  7. Freeze overnight or until solid (around 3 hours)

  8. Bake at 350F for 15-20 minutes
