Clean 1 lb of chicken, consisting of 1 chicken thigh and chicken tenders.
Season the chicken with 1 tsp onion powder, 1 tsp garlic powder, 2 tsp adobo all purpose seasoning, 1 tsp smoked paprika, ½ tsp accent, ¼ tsp black pepper, and ¼ tsp celery seeds.
Add 1-2 tsp cornstarch to the seasoned chicken.
Prepare the batter by mixing 1 cup all-purpose flour with onion powder, garlic powder, 2-3 tsp adobo seasoning, and smoked paprika.
Add 1 egg and 1 ¼ or 1 ⅓ cups club soda to the batter and mix well.
Freeze the seasoned chicken for 30 minutes.
Make a homemade dipping sauce by mixing mayo, honey bbq sauce, honey, and yellow mustard.
Heat oil to 350°F and coat the chicken in the batter one at a time, then fry until golden brown.
