Soft & Fluffy Vanilla Cupcakes
  1. Whisk flour, baking powder & salt

  2. Beat butter + sugar till pale & fluffy

  3. Add eggs one by one, then vanilla

  4. Fold in flour & buttermilk alternately

  5. Fill ⅔rd of cupcake liners & bake at 170°C for 18–20 minutes

  6. Check with toothpick for doneness - cupcakes are ready when toothpick comes out clean
