Roxanne Quinteros' Fideo Loco Recipe
Ingredients:
1 teaspoon vegetable oil
1 (7-ounce) bag or box fideo (original recipe calls for 5 ounces)
1 pound ground beef
4 ounces tomato sauce
1 tablespoon onion powder
1 teaspoon garlic powder
1 ½ cups water
1 ½ cups chicken stock
1 medium potato, chopped (optional)
2 cups pinto beans, freshly cooked or canned (drained and rinsed)
Directions:
Toast the Fideo:
Heat the vegetable oil in a skillet over medium heat.
Add the fideo and toast until lightly browned. Remove from the skillet and set aside.
Cook the Beef:
In the same skillet, add the ground beef.
Cook, breaking it into small crumbles, until browned through.
Add Ingredients:
Add the tomato sauce, onion powder, garlic powder, water, and chicken stock to the skillet.
Stir in the reserved fideo.
If using, add the chopped potato at this stage.
Add more water if needed to ensure the potatoes soften properly.
Simmer:
Cover the skillet and bring the mixture to a simmer.
Cook until the fideo and potatoes (if added) are tender, stirring occasionally.
Add Beans and Season:
Stir in the pinto beans.
Season with salt and pepper to taste.
