Protein Breakfast Biscuits
  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, mix the almond flour, cottage cheese, shredded cheese, baking powder and salt until combined. The dough should be thick, almost like a cookie dough texture. If too wet, add a bit more flour.

  3. Using a 3 tbsp cookie scoop or a measuring cup, scoop 9 biscuits onto the baking sheet. Using the bottom of a measuring cup or glass, press down lightly on the tops to form a biscuit shape.

  4. Transfer to the oven and bake for 20-25 minutes until tops are golden and biscuits are baked all the way through. Let cool for 5 minutes before removing from the pan.

  5. Top with cottage cheese and scrambled eggs, or butter and jam
