Dense, Fudgy Brownies (Butter-Cocoa)
  1. Preheat oven to 325°F.

  2. Lightly grease & line the bottom & sides of an 8"x8" square baking pan with parchment paper, leaving an overhang on two opposite sides so you can remove them from the pan. Set aside.

  3. Combine the butter, sugar, cocoa, & salt in a small-medium saucepan. On very low heat, continually stir until butter fully melts & mixture becomes very soft & somewhat smooth, about 4-5 minutes.

  4. Turn off heat & put mixture into a mixing bowl. Let cool until no longer hot & only warm to touch. Add vanilla & eggs, fully incorporating each egg before adding the other. Make sure these are FULLY combined.

  5. Once combined, add flour & combine very well.

  6. Now, beat like it owes you rent money - about 40 strokes. You want it thick & glossy.

  7. Pour mixture into lined pan & bake on middle rack for 20-25 minutes. They will still look somewhat uncooked in the middle - that's fine.

  8. Let sit in pan for 30 minutes before trying to cut or remove. This is not optional unfortunately.
