Prepare the filling by crumbling the tofu
Finely dice the green chilli
Grate the fresh ginger and garlic
Heat ghee or vegetable oil and combine with crumbled tofu, diced chilli, grated ginger, and grated garlic
Add garam masala, cumin seeds, and tomato puree to the mixture
Stir in finely chopped fresh coriander and season with salt and black pepper
Prepare the dough by mixing plain flour, water, olive oil, and a pinch of salt
Knead the dough until combined
Roll out the dough into a flatbread
Add the spiced tofu filling and grated cheese to the flatbread
Fold or seal the flatbread to create a stuffed pocket
Cook in a pan with ghee or oil until golden and cheese is melted
