Preheat the oven to 350 F.
In a large mixing bowl, whisk together 1 cup flour, the baking soda, salt, and ground ginger.
In a heat-proof measuring cup, place the bacon fat and add the boiling water.
Then add molasses enough to make 1 cup.
Pour into the flour mixture and beat well.
Add more flour (about another cup) until a soft dough forms.
Knead in a little more flour as needed to make a dough that can be rolled without excessive stickiness.
Flour your rolling surface well, and roll out the dough about a half inch thick, or a little thicker.
Cut into rounds and bake on a parchment-lined baking sheet at 350 F for 10-12 minutes.
