  1. Prepare a steamer and put on simmer.

  5. Place the filled ramekins in the steamer and cover.

  6. Steam for 12-25 minutes or until the eggs reach your preferred doneness.

  7. Season with salt and pepper and serve with chopped chives and buttered toast.
