Lay out 3 ramekins or small heat proof bowls about 3.5" wide and 2" deep.
In a large bowl, mix together the ground pork, cabbage, green onions, ginger, soy sauce, Shaoxing wine (if using), toasted sesame oil, salt, and white pepper. If you don’t have white pepper, you can sub in black pepper.
Into the ramekins, add a 1 tbsp layer of the pork dumpling mix, then top with a wonton wrapper. Continue alternating pork and wonton wrappers until you almost reach the top, about 8 layers.
Just after the final layer of pork mixture, add about 2.5 tbsp chicken stock to each of the ramekins.
Finish with a layer of 2 wonton wrappers.
Steam for 20 minutes or until the pork is cooked through.
Remove from the steamer, let cool slightly, and enjoy with desired toppings.
