Zucchini Pate
  1. Gently simmer the garlic and basil until soft, not coloured, for 1-2 minutes

  2. Add the zucchini and season

  3. Cook slowly for around 20-30 minutes, stirring frequently, ensuring little colour but allowing the zucchini to collapse and be soft

  4. Season further if needed

  5. Blitz until smooth, leaving about 20% chunky for personal preference

  6. Add to sterilised jars and keep in the fridge for up to two weeks
