Gently simmer the garlic and basil until soft, not coloured, for 1-2 minutes
Add the zucchini and season
Cook slowly for around 20-30 minutes, stirring frequently, ensuring little colour but allowing the zucchini to collapse and be soft
Season further if needed
Blitz until smooth, leaving about 20% chunky for personal preference
Add to sterilised jars and keep in the fridge for up to two weeks
