Sweet & Tangy Chicken Stir-fry (with Wood Ear & Bamboo)
  1. Marinate the chicken

  2. In a bowl, toss chicken strips with light soy sauce, cornstarch, salt, and water until the liquid is absorbed. Rub in 1 tsp oil to coat.

  3. Stir the sauce

  4. In a small bowl, whisk together black rice vinegar, chicken stock, light soy sauce, dark soy sauce, sugar, cornstarch, and water until smooth. Set aside and give it a stir again just before using.

  5. Sear the chicken

  6. Heat a wok or large skillet over high heat until hot. Add 2 Tbsp oil, then the marinated chicken. Stir-fry just until the chicken turns opaque and lightly seared, 60–90 seconds. Transfer to a plate.

  7. Stir-fry the aromatics & veggies

  8. Add the remaining 1 Tbsp oil to the wok. Sauté pickled chili, garlic, and ginger until fragrant (about 20–30 seconds). Add wood ear mushrooms, bamboo shoots, and carrot. Stir-fry until just tender-crisp, 1–2 minutes.

  9. Combine & sauce

  10. Return chicken (and any juices) to the wok. Toss for 30 seconds. Lower heat to medium-low, whisk the sauce again, then pour it in. Stir continuously; it will thicken to a glossy coating in 30–60 seconds.

  11. Turn off the heat and fold in the scallion. Serve immediately with steamed rice.
