Preheat oven to 350°F (175°C) & line baking sheet with parchment paper
Heat olive oil in a pan, sauté green onions for 1–2 mins
Add chopped spinach & cook until wilted (2–3 mins), season with salt & pepper
Let spinach mix cool slightly, then combine with egg whites, almond flour, baking powder & feta in a bowl
Form into 6 biscuit shapes or drop spoonfuls onto tray
Bake for 20–25 mins until edges turn golden
Let cool for a few mins before enjoying
