High-protein Spinach & Feta Biscuits (gluten-free)
  1. Preheat oven to 350°F (175°C) & line baking sheet with parchment paper

  2. Heat olive oil in a pan, sauté green onions for 1–2 mins

  3. Add chopped spinach & cook until wilted (2–3 mins), season with salt & pepper

  4. Let spinach mix cool slightly, then combine with egg whites, almond flour, baking powder & feta in a bowl

  5. Form into 6 biscuit shapes or drop spoonfuls onto tray

  6. Bake for 20–25 mins until edges turn golden

  7. Let cool for a few mins before enjoying
