Mix all pizza dough ingredients until a rough mass is formed and rest 35min, then knead until you reach a smooth surface. Rest 30min
Add chopped olives and mix until combined.
Let the dough rest covered for a total of ~4 hours at room temp. Then take it to the fridge between 24 to 48 hours.
Take the dough out of the fridge, degass and make six balls. Transfer them to a lined pan, and let them rest covered until they look puffy (2h more or less).
Add olive oil to each ball and flatten them out, add toppings.
Bake at 450F and bake for 15min or until the desired color is reached.
