In a large skillet, heat the olive oil over medium heat. Add the onion, carrot, and mushrooms, and sauté until they are soft, which should take about 8 minutes.
Stir in the garlic and continue to sauté for another 2 minutes.
Transfer the sautéed vegetables to a food processor. Add the cooked rice, flour, bread crumbs, Italian seasoning, salt, and pepper. Pulse the mixture until everything is well combined, but it's fine if there are still small chunks of carrot visible.
Shape the mixture into 4 to 6 burger patties, depending on your preferred size.
To pan fry, heat about 1 tablespoon of olive oil in a non-stick skillet over medium-low heat. Cook the burgers for about 7 minutes on each side until they are nicely browned.
To bake, arrange the burger patties on a large baking sheet lined with parchment paper. Bake in a preheated oven at 400°F for 8 minutes, then flip and bake for an additional 8 minutes.
To grill, preheat your grill to 400°F. Lightly grease the grates by dipping a folded paper towel in a high-heat oil and brushing it on the grates. Grill the burgers for 5 to 7 minutes on one side until browned, then flip and grill for another 5 to 7 minutes.
