Slow-cooker Lentil Soup

  1. To a 3- or 4-quart slow cooker, add the chicken broth, carrots, celery, onion, potatoes, lentils and honey.

  2. Add the seasonings.

  3. Stir to combine the ingredients. Cover and cook the soup on low until the vegetables and lentils are tender, about five to six hours.

  4. Stir in the balsamic vinegar just before serving.

  5. Ladle the soup into bowls, and garnish each bowl with shaved Parmesan and fresh parsley, and serve the soup with crackers.
