Chewy Potato Noodles
  1. Peel 2 potatoes and cut into cubes or stripes

  2. Put the potatoes in a pot and fill with water

  3. Boil until tender enough to not stick to chopstick

  4. Add 5g salt and 200g cornstarch

  5. Mix the ingredients well

  6. Pour 50ml warm water and mix

  7. Divide the dough into several parts and roll into thin ropes

  8. Boil water in a pot

  9. Place potato noodles in boiling water

  10. Boil until they float, then stir with chopsticks

  11. Boil for 2 minutes

  12. Scoop noodles into a cool water bath

  13. Season with 5g salt, 5g minced garlic, 5g vinegar, 5g soy sauce, and 5g chilli powder

  14. Heat 20g oil until hot

  15. Pour hot oil over the noodles and seasonings

  16. Mix all seasonings well

  17. Sprinkle fresh coriander on top

  18. Serve and enjoy
