Peel 2 potatoes and cut into cubes or stripes
Put the potatoes in a pot and fill with water
Boil until tender enough to not stick to chopstick
Add 5g salt and 200g cornstarch
Mix the ingredients well
Pour 50ml warm water and mix
Divide the dough into several parts and roll into thin ropes
Boil water in a pot
Place potato noodles in boiling water
Boil until they float, then stir with chopsticks
Boil for 2 minutes
Scoop noodles into a cool water bath
Season with 5g salt, 5g minced garlic, 5g vinegar, 5g soy sauce, and 5g chilli powder
Heat 20g oil until hot
Pour hot oil over the noodles and seasonings
Mix all seasonings well
Sprinkle fresh coriander on top
Serve and enjoy
