Seal the lid and shake well until the chicken is fully coated
Place chicken on a rack and spray with cooking spray
Bake or air fry until crispy
In a bowl, combine soy sauce, water, ketchup, gochujang, rice vinegar, honey, and brown Stevia
Stir the glaze until it thickens
Add the crispy popcorn chicken to the glaze and toss together to fully coat
Divide into four equal servings and serve with sticky rice
