In a large bowl, mix ground beef, soup mix, eggs, breadcrumbs, milk, and pepper until well combined.
Form into a loaf and place in a greased or lined slow cooker.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
In the last 10–15 minutes, top with Swiss cheese, cover until melted.
Let rest before slicing and serve garnished with parsley if desired.
