Shawarma Wraps
  1. Preheat the oven to 200°C (400°F)

  2. Place the ground beef on a sheet of parchment paper, cover with another sheet, and roll it out into an even thin layer

  3. Remove the top sheet of parchment and roll the meat into a tight log

  4. Transfer the meat roll to a baking sheet and add the whole garlic heads and tomatoes to the same sheet

  5. Lightly drizzle the garlic with olive oil and bake for 40 minutes at 200°C

  6. Remove from the oven and let everything cool for about 15 minutes

  7. Make the tzatziki by squeezing the roasted garlic cloves out of their skins and mashing them

  8. Mix the Greek yogurt with the mashed roasted garlic, dill, mint, grated cucumber, lemon juice, and olive oil

  9. Season the tzatziki with salt and pepper to taste and stir or blend until smooth

  10. Remove the cooled meat from the parchment and tear or slice it into small pieces

  11. Spread tzatziki on a flatbread and add fresh cucumber slices, meat pieces, sliced red onion, and roasted tomatoes

  12. Roll up the wrap tightly and toast on a skillet on medium-high heat
