Elote/esquites Stuffed Zucchini
  1. Cut your zucchini in half and scoop out the inside.

  2. Cook corn in a pan and remove from heat.

  3. Add the rest of ingredients (chicken, shredded cheese, cream cheese, garlic powder, tajin, chili powder, paprika, salt, green onions, cilantro) in the pan or to a bowl.

  4. Stir until combined.

  5. Place mixture in the zucchini halves evenly.

  6. If you like your zucchini to be more tender/softer, bake or air fry the zucchini alone for a few minutes at the same temp. before adding the filling.

  7. Bake at 425 for 12-15 minutes, or until cheese has melted.

  8. Add optional toppings like cotija, chipotle mayo, cilantro and tajin or lime juice.

  9. Optional: Air fry at 350 for 10-12 minutes or until cheese has melted.
