Cut your zucchini in half and scoop out the inside.
Cook corn in a pan and remove from heat.
Add the rest of ingredients (chicken, shredded cheese, cream cheese, garlic powder, tajin, chili powder, paprika, salt, green onions, cilantro) in the pan or to a bowl.
Stir until combined.
Place mixture in the zucchini halves evenly.
If you like your zucchini to be more tender/softer, bake or air fry the zucchini alone for a few minutes at the same temp. before adding the filling.
Bake at 425 for 12-15 minutes, or until cheese has melted.
Add optional toppings like cotija, chipotle mayo, cilantro and tajin or lime juice.
Optional: Air fry at 350 for 10-12 minutes or until cheese has melted.
