Joyce’s Ministrone Soup
  1. Saute onions in the oil on low heat in large stock pot until onions are see through.

  2. Add the broth, bringing to a boil.

  3. Add mixed frozen vegetables and carrots.

  4. Boil low for 6-7 minutes

  5. Add zucchini, squash and bring to boil again for 2 minutes until all veggies are done.

  6. Stir in rinsed beans, pasta and herbs

  7. Add tomatoes.

  8. If you think the soup is too chunky, add more chicken broth.

  9. Let simmer on low for 10 minutes.

  10. Serve with parmesan cheese.
