Place freeze dried strawberries in a food processor or blender, and blend until powdery.
Add strawberries, cauliflower rice, maple syrup, and vanilla extract, and blend until a smooth mixture is formed. If you want, you can strain this mixture to remove the strawberry seeds. I don't mind the texture so I leave mine in. Place in the fridge.
Pour heavy cream in a mixing bowl, and whip until stiff peaks form.
Add in the strawberry mixture and mix until just combined. Taste to add more sweetener, if you prefer.
Transfer to a popsicle mold. Freeze for at least 4 hours.
