Pre-heat your oven with the bake/broil option to 210 C (410 F)
Finely mince 2 cloves of garlic and finely dice 1 tomato, add each to a seperate bowl and set aside
Cut a large zucchini in half, then cut each half again horizontally, you should end up with 4 pieces, using a spoon, de-seed each piece of zucchini, leaving a ¼ inch border on each end
Evenly distribute the tomatoes first and then the garlic into each zucchini boat, drizzle some extra virgin Spanish olive oil on top of each boat and season with sea salt and freshly cracked black pepper
Evenly distribute 1 ball of fresh mozzarella to the 4 pizza boats, break the mozzarella with your hands as you add it to each zucchini boat and season with dried oregano on top
Add the zucchini pizza boats to a baking tray lined with parchment paper and add to the oven for about 18 minutes
Once cooked, take the baking tray out of the oven and let the zucchini pizza boats rest for about 5 minutes
Transfer the zucchini pizza boats to a plate and top each one off with freshly chopped basil
