Bakewell Loaf Cake
  1. Preheat the oven to 160ºc fan and line a 2lb loaf tin

  2. Beat the butter and sugar together until fluffy

  3. Add the almonds, flour, eggs and flavouring and mix

  4. Fold through the berries and spoon into the tin

  5. Sprinkle on some almonds if you want

  6. Bake for 45-55 minutes and then leave to cool fully

  7. Beat the butter on it's own until smooth

  8. Add the icing sugar and almond extract and mix

  9. Pipe onto the cake however you want

  10. Top with fresh berries, toasted almonds and a dusting of icing sugar
